Beef shank . A shank, known in arabic as موزة, is muscle at the upper part of the male cow's leg. It is extra lean and perfect for long slow cooking and is an ideal cut to use for beef bourguignon.
greenolic's beef comes from a a small farm where cattle are fed on local grains, clover, corn and other plants already grown in the farm. The whole farm is 100% chemical-free and the animals are not given vaccines or antibiotics. The cows are partially free range where they are allowed to spend a lot of time in the day sun.
This is for sure one of the cleanest and healthiest sources of local beef.
